It’s a pretty old anime. Came out in 2006, but it really holds up to this day. There are 29 episodes including 5 OVA episodes at the end.
Now you guys can watch it how you want, but the dub is the most popular by far, so I recommend the dub version.
Be warned that there is some blood and gore and a whole lot of swearing…. Like a lot of swearing. (If you chose the dub)

I remember the author of the manga, Rei Hiroe, considers the dub dialogue to be canon because it only has 1 Japanese character for most of the series who is multilingual and the rest of the cast is multinational or American so they are already canonically speaking English in universe.
